This was our last meal before both of us left for different travel, so we planned it to be simple and leave no leftovers! Both of us love tomato soup, but aren't in love with the relatively high fat and DEFINITELY high salt prepared versions you find in most stores. We have been looking for a super easy, supper good tomato soup for a long time and I think this is it. It's simple and light, but with enough flavor to keep you interested. We will certainly be revisiting this!

Chopping: Garlic, parsley, apple
Time: 25 minutes
Make ahead: I think this would save fine.

Quick Tomato Soup – Cooking Light
Serves 2
1 t extra-virgin olive oil
3 cloves garlic, minced
2 cans diced tomatoes, undrained
2 cups chicken or vegetable broth
1 T balsamic vinegar
½ t black pepper
Chopped parsley, to garnish
Heat the oil in a medium sauce pan over medium-high heat. Add garlic and sauté for 1 minute. Add remaining ingredients and bring to a slight boil. Reduce heat and simmer, uncovered, for 10 minutes. Garnish with chopped parsley.
did you see the tomato-orzo soup that's in the most recent Wegman's magazine? It's on my list to try, assuming I can find whole-wheat orzo somewhere (I think Wegman's makes one).
So, we got the Wegman's Tomato Orzo Soup as a "Take It" (As in "Make it or Take it") soup the first night we were back from DC. We needed an easy, but not terribly unhealthy dinner. It was GREAT. It makes a heartier meal than the Quick Tomato Soup I posted (no need for cheese), but I was grateful for a hearty salad and bread (with butter!) to go with it. All in all though a VERY good dinner - and I had lost a pound of my "vacation at mom's house" weight the next morning!
