Our vegetarian friend (S) arrived, so now we're cooking for quite the crowd. This is one of those recipes that M and I think sounds unappetizing- tahini and maple syrup??? Because of our perpetual quest for good tofu dishes and our trust in Eating Well, we tried it and were very pleasantly surprised! First of all, roasting is an EXCELLENT and easy preparation for tofu, allowing you to make the tofu and many vegetables at once. Second, the sauce is a wonderful and unique blend of flavors (and doesn't taste maple-y at all!). Like the chicken with cherry marsala sauce, this is an excellent meal for company. It's colorful and tempting!

Make ahead: You can prep all the ingredients and make the sauce ahead.

Sesame-Maple Roasted Tofu – Eating Well
Serves 2-3

1 14oz block extra firm tofu, rinsed, patted VERY dry, and cut into 1” cubes
1 medium red onion, sliced into half rings
2 t canola oil
2 t toasted sesame oil
¼ t salt
¼ t pepper
1 T tahini
1 T soy sauce
2 t maple syrup
1 t cider vinegar
3 cups sugar snap peas (1 bag from TJs)
1 T sesame seeds

Preheat oven to 450 degrees. Cover a rimmed baking sheet with foil and spray with cooking spray.

Toss tofu, onion, canola and sesame oil, salt, and pepper in a large bowl. Spread onto baking sheet and roast until tofu is lightly golden on top and the onions are browning in spots (15-20 minutes, we did 17).

Whisk tahini, soy, maple syrup, and vinegar in a small bowl. Remove baking sheet from the oven, sprinkle with snap peas, and tahini mixture. Stir to combine. Sprinkle with sesame seeds. Return to the oven and roast for an additional 8-12 minutes (we did 12). You may want to briefly broil (high) to brown even further.
