So, I just spent about 10 minutes searching the blog for this recipe because I CANNOT believe that we haven't posted this. This is one of our best summer salad recipes. We were inspired by a Whole Foods recipe where you add blue cheese to a pasta salad with corn, but we ended up changing their version to make it more vegetable heavy. The last time we had this T loved it, but this time he completely rejected it. Ahh, the vagaries of the 3-year-old :) The peaches were so perfect they could have been my whole meal.
Prep Notes
Difficulty: Easy
Chopping: Corn, tomatoes, peaches
Time: 35 minutes
Make ahead: This saves pretty well (excellent for a picnic), but I like itbest fresh and a little warm from the pasta.

This was such a great new meal in June and since our friend Flynn likes goat cheese so much, this was a no brainer to have again. Everyone loved it and it makes enough so that we have tons of leftovers for a picnic tomorrow :) We're planning a hike if the weather is good!

Chopping: Green beans, grape tomatoes, olives, shallots, parsley, thyme
Time: 40 minutes
Make ahead: It's going to be awesome for our picnic.

This is one of the ultimate summer recipes for those of us who treasure their herb gardens. We have a big one this year, but I have to be honest and say the cold temps, and plethora of rain have caused it to struggle though. It is getting warmer (we went to the pool today!) and things are beginning to look up. This is the celebration of that perkiness. This recipe calls for four different herbs, but in small amounts. Best if you grow it yourself :) Anyway, this is an excellent summer meal. Very flavorful, light, and fast to prepare!

Chopping: Garlic, onion, parsley, oregano, rosemary, thyme, watermelon
Time: 30 minutes
Make ahead: This is great prepared ahead.
