This is an amazing secret I've been keeping from you! This is one of our BEST crock pot recipes and we got it from one of our closest friends in California, Alyssa, who often made this for us. It is SO easy and makes some of the best, not to mention leanest pulled pork around. Everyone should make this - it's perfect for company too.


Prep Notes
Difficulty: Super easy
Chopping: Shallot, trimming pork, bacon, watermelon
Time: 15 minutes prep, 8 hours to cook, 25 minutes to pull everything else together
Make ahead: Absolutely.

Alyssa’s Pulled Pork – Alyssa with minor adjustments from M & J
Serves 6 (or more or less)

1 pork loin roast (any size – 3 lbs serves 5-6)
Salt and pepper to rub meat
2 large shallots coarsely chopped
1 slice bacon, chopped
BBQ sauce of your choosing (We’ve been happy with KC Masterpiece)
Lightly grease your crockpot insert.

Trim pork loin. Rub with salt and pepper and place in your crock pot insert. Sprinkle with shallots and bacon. Cook on low for 8 hours (or more). During the last 30 minutes or so, pull apart with two forks and add some BBQ sauce. Heat through.

Serve with extra BBQ sauce on toasted whole grain buns.
