We made this last summer fairly soon after we moved to Buffalo, which is odd because it's not a very summery meal. I think we were seeking comfort food in our new digs! Today is simply not a very summery day - high of 60 here! - so we're thinking comfort food again. This is supposed to be a substitute for Hamburger Helper, but I think anyone who was expecting Hamburger Helper would be really disappointed here. This is full of vegetables and has LOTS of thyme and other seasonings AND is not the fastest to prepare. We love it though and it makes a great Sunday dinner when the weather is just a little chilly and classes begin the next day. It's almost like a culinary way to say, "Welcome Fall!"

Chopping: Garlic, carrots, onion, parsley
Time: 40 minutes
Make ahead: This is great the next day and would probably even freeze pretty well.

This is another one of M's Grammie's recipe (see Grammie's sauce), often referred to as American Chop Souy. It's a very basic, comforting casserole, and, as such, doesn't fit into our typical menu. That said, both of us are suckers for comfort and tradition. We had planned this to be a meal this week before today, but it seems especially fitting tonight as we had a somewhat rough Mother's Day. T was *not* in the spirit of the day - or really of anything. So, a lot of today was a trial and comfort seems paramount. Regardless of the troubles today, I'm grateful to be a mom and even more grateful for the preponderance of good days we have with T. Most people are shocked that he's a "terrible two" :)

Time: 15 minutes tp prep, 30 minutes to bake
Make ahead: You can even freeze this and reheat.

This was our first homemade mac and cheese recipe, made for the first time in 2003, and we LOVE it. It's very simple, but the addition of scallions, garlic, and mustard give the cheese sauce a zip most classic versions don't. Of course, I haven't even mentioned the spinach, which gives it color and adds veggies. I also think the spinach adds a wonderfully soft texture. This is yet another recipe in one of our most common January recipe category: comfort foods that manage to be on the lighter side. We always love baked tomatoes - a way of making winter tomatoes edible and it's easy to make right alongside the mac. Just stick them in about 10 minutes earlier than the casserole.

Time: 50 minutes, including 15 minutes baking time
Make ahead: This is very good the next day.

M and I are both fools for German food. We love sausage, German potato salad, sauerkraut, red cabbage, spicy mustard, and the like. Perhaps one of our favorites though is the humble spaetzle. This egg-y cross between a noodle and a tiny dumpling is something just this side of heaven. This casserole shows them off very well - perfect chewy texture with just a bit of ham and a light sauce accented with the wonderful aroma and taste of gruyere cheese (A personal favorite as well. No, it's not just more expensive Swiss!). Though this takes a while because you have to bake it, the prep is simple and you can get everything cleaned up and have a cocktail or a glass of wine while it finishes. What a relaxing way to spend the evening. Maybe I'll even get a few Christmas cards addressed. Probably not.

Make ahead: This is a great leftover.
