Since our time in southern California, M and I have loved fish tacos. If you've never had them, they aren't much like beef tacos. They're very Baja style - grilled fish, fresh (and crunchy) veggies, lots of cilantro, and lime. They were very much a year-round food in California, but now they are very summer for us. It was quite warm for here today (close to 80) and we foresee a dip in temps so we wanted to get them in before the cool down. What a great meal!

Prep Notes
Difficulty: Easy
Chopping: Monterrey jack, cabbage, tomatoes, scallions, cilantro, limes
Time: 30 minutes
Make ahead: You can chop all the toppings ahead, but grill the fish last minute.
